Base teaching scenario. These are not actual shop results.
Equipment purchase or depreciation, financing, income taxes, owner compensation if not budgeted in the fixed labor amount, and any unlisted cost. All scheduled labor and occupancy must be inside the stated fixed budget; do not add an extra payroll allocation. Fixed cost is an assumed schedule and occupancy budget. Increased volume may require a new staffing tier or equipment; recalculate fixed costs when capacity changes. A percentage variable cost is a simplification, especially when price changes while physical inputs stay similar.

Use the café model and compare bean-cost, wage, price and demand sensitivities. Keep the schedule fixed first, then test an added peak shift.

One batch, many channels
Compare direct bags, wholesale pounds and two-bag subscriptions after converting all outputs to roasted weight. Preserve each channel's shipping, delivery and acquisition assumptions.
